Basil Lemon Chicken

Ingredients
- 3 large frozen chicken breasts, partially thawed and cut into cubes
- 4 T butter
- Juice of 1 ½ lemons (small)
- ¼ Cup cooking wine (sherry or dry vermouth)
- 5 T dried basil
- 1 T minced dried onion
- ¼ cup cold milk
- 1 T cornstarch
- 1 cup sliced mushrooms
Preparation
- Melt butter in a large skillet over medium heat
- Add onions and allow to brown until butter is fragrant and slightly foamy
- Add chicken, cooking wine, basil, and lemon juice
- Reduce heat slightly and simmer for 20 minutes
- Add the mushrooms, simmer additional 10 minutes.
- Stir the cornstarch into the milk, and stir the mixture slowly into the pan, adding the starch and milk a little at a time.
- Remove from heat and allow sauce to thicken
- Serve immediately.
