Basil Lemon Chicken

Basil Lemon Chicken

Prep time: 10 minutes
Cook time: 30 minutes

Ingredients

  • 3 large frozen chicken breasts, partially thawed and cut into cubes
  • 4 T butter
  • Juice of 1 ½ lemons (small)
  • ¼ Cup cooking wine (sherry or dry vermouth)
  • 5 T dried basil
  • 1 T minced dried onion
  • ¼ cup cold milk
  • 1 T cornstarch
  • 1 cup sliced mushrooms

Preparation

  1. Melt butter in a large skillet over medium heat
  2. Add onions and allow to brown until butter is fragrant and slightly foamy
  3. Add chicken, cooking wine, basil, and lemon juice
  4. Reduce heat slightly and simmer for 20 minutes
  5. Add the mushrooms, simmer additional 10 minutes.
  6. Stir the cornstarch into the milk, and stir the mixture slowly into the pan, adding the starch and milk a little at a time.
  7. Remove from heat and allow sauce to thicken
  8. Serve immediately.

Yields: 4 servings
